Pontus Wellén’s commitment to excellence has taken him to Sweden’s leading culinary competitions. Earlier this year, he was named a finalist in Sweden’s national selection for the Bocuse d’Or 2025, one of the world’s most prestigious chef competitions — a reflection of his ambition, focus, and technical skill. He has also been a semifinalist in Årets Kock 2025 and a quarter-finalist in both 2023 and 2024, consistently recognised for his precision and creativity.
From his time at the Grand Hôtel to becoming Executive Chef at the Sheraton, Pontus Wellén has been a true champion of Swedish cuisine. He has paired his technical mastery and love of local produce with a deep affinity for the sea — an influence nurtured both at home and during his time working along the Spanish coast. Equally inspired by Sweden’s forests and fields, Pontus balances his menus between the flavours of the wild and the freshness of the ocean, creating food that reflects both the landscape and his own journey through it.


For the “Vilt o Hav” Chef’s Table, Pontus brings these influences together — creating a dinner that explores the meeting point between forest and sea, wild game and crustaceans, tradition and innovation. It’s an elegant expression of his philosophy: honest ingredients, thoughtful balance, and the quiet confidence of a chef at the height of his craft.
Guests can look forward to a nine-course tasting menu served in an intimate, refined setting. Each course will be thoughtfully paired with a perfectly matched beverage, enhancing the flavours and storytelling of the evening. Throughout the dinner, Chef Pontus Wellén will personally guide guests through the menu, sharing insights into the inspiration, ingredients, and philosophy behind each dish. The experience will conclude with after-dinner drinks, inviting guests to unwind and continue the evening in a relaxed, elegant atmosphere.
