The Experience

Chez STHLM offers a private foraging experience rooted in the landscapes and seasons of Sweden. Guided by local expertise, guests explore forests and natural environments to gather ingredients such as mushrooms, berries, and herbs. The experience continues with a chef-led dining programme, transforming foraged ingredients into a refined meal that reflects both place and season.

Traditional techniques, guided by the chef

​As part of the experience, guests are introduced to Nordic methods of fermentation and pickling, guided by the chef. Using selected foraged ingredients, this hands-on element explores techniques such as preserving mushrooms, berries, and vegetables, offering insight into how seasonal produce is extended and transformed. This activity adds a practical and engaging dimension to the experience, connecting traditional preservation methods with contemporary Nordic cuisine.

A connection to nature and season

The experience focuses on ingredients that define each season, from chanterelles and porcini to lingonberries and wild greens. This creates a direct connection between landscape, produce, and cuisine.

Following the foraging, guests enjoy a meal prepared by a Chez STHLM chef, incorporating both foraged and complementary ingredients. The dining experience is structured yet relaxed, designed to reflect the simplicity and depth of Nordic cuisine.
